Andy treated us to homemade blueberry pancakes yesterday morning...
oh.my.goodness!
They were fabulously, amazingly delicious!
Treat yourself to some too!
Ingredients:
1.5 cups all purpose flour
3/4 teaspoon baking soda
1.5 teaspoons baking powder
2 tablespoons sugar
1/4 teaspoon fine sea salt
1 &3/4 cups or as needed buttermilk
2 large eggs
3 tablespoons melted unsalted butter + butter for serving
2 cups blueberries
canola oil for cooking
pure maple syrup for serving
makes four servings
Directions:
Preheat oven to 2oo degrees.
In a large bowl sift together flour, baking soda, baking powder, sugar, & salt.
In a medium bowl, whisk together the 1 & 3/4 cups buttermilk, the eggs, & the 3 tablespoons melted butter.
Pour the buttermilk mixture into the flour mixture and stir just until combined.
Fold in blueberries.
Place a griddle over high heat until hot. Turn heat back down. Lightly oil griddle.
For each pancake, pour about 3/4 cup of batter onto the griddle and cook until bubbles form on the surface, about minutes.
Flip the pancakes and cook until the bottoms are golden brown, 1-2 minutes more.
Transfer to a baking sheet and keep warm in the oven.
Repeat. If batter begins to thicken, thin it with a bit of buttermilk.

& I made AJ some bean bags the other day with scraps from my stash.
Super simple & since he would just be throwing them around, I wasn't super cautious about sewing perfectly....

Love the bean bags. Andy, I cordially invite you to my new house, once it's built, to make everyone blueberry pancakes! Well, everyone except JL. He now has an aversion to them.
