You Make Me Happy When Skies Are Gray

I am ready for spring and lots and lots of sunshine.

Until then I will just try and resist the urge to purchase
each and every one of these happy little things!

What You've Been Waiting For

Starting at the end of May, I get to be a stay-at-home mom!

(at least for a year, then we will see what happens)

There it is! In writing!

This is really happening.

I have been holding my breath, biting my nails, and

just been plain too terrified to get excited.

But let’s face it. We spend what we make. I am tired, stressed to the max, and not rich.

My kids are growing up without me.

Life is short and uncertain.

It’s about time to simplify and prioritize around these parts.

I went to college straight out of high school, got two degrees, taught for 7 years…

I did what I thought was the responsible “next step in life”.

And I think being a working mom is over-rated.

(gasp)

I won’t get into the logistics of my chaotic day.

Long story short…

It is just seems impossible for me (this may not be true for everyone) to be a good teacher, a good wife, and a good mom.

I feel like most days our life style is about surviving, not truly living.

I want to fully take in my kids.

I don’t want to rush them into the car every morning.

I want to have time to make them breakfast and sit with them and visit as we eat it.

I want to drop them off at preschool and sign up for holiday party supplies.

I want to pick them up and ask what they did that day.

I want to have the time and energy to laugh and play with them in the evenings.

I want to make my husband dinner.

I will tell you right now, our house will not always be clean…

I will not always have an amazing dinner on the table…

We will be poor of money but rich in spirit.

I will get to enjoy my children and my husband and take life in with them.

So I will use my two degrees to raise three...(or four) children well and be a domestic goddess.

We go back in two weeks...

just to double check...

my doc may have seen two in there today...

(How much fun can I have?)

Oh, and we are buying a mini-van.

Whoop! Whoop!

Let’s get this party started.

These Thoughts Are Getting Louder

Friday, February 18, 2011

Lately...

Some thoughts have been running through my head...

about how out of balance things seem in this fast-pace life...

and I keep going back to this book I recently bought...

That puts other thoughts in my head...

I'm just saying...

maybe something is on the horizon...

and maybe it is a fabulously wonderful thing...

Super Yummy, Easy, Fast Potato Soup

(pic from kitchenscoop.com)

Ingredients:

1 large potato, per person
1/4 cup chopped celery, per person (you can use carrots if you like)
1/4 cup chopped onion, per person
1/4-1/2 cup milk or half-and-half or cream
salt and pepper to taste

Directions:

1. Peel and cube potatoes.

2. Put in large pan with onions and celery.

3. Add water, but don't quite cover the veggies.

4. Bring to a boil, lower heat, cover and simmer for
20 minutes...OR until the veggies are tender...
(careful not to scorch your potatoes like I did the first time)

5. Crush potatoes, but don't mash them too much...chunks are good.

6. Add enough milk or cream to thin to desired thickness and add salt & pepper to taste.

We topped our soup with bacon and cheddar cheese....
green onions would be yummy too!

Enjoy with warm fresh bread!

Perfect on a snowy winter day.

Valentine's Day Decorations

So after the whole chocolate chip/dog fiasco,
I did get to do a little crafting.
I am not usually a big Valentine's Day decorator...
but I thought
what the heck...
The dog is going to live...
let's decorate for Valentine's Day.
I already had all the stuff and the time.
It was free. Why not?
Let's welcome Latte home with some festive lovey dovey pink decor.
